I have started cooking more on my new med-Lamictal! Here goes:
2 tablespoons vegetable oil 1 pound boneless, skinless chicken breast-cut into strips 3 cups cut up vegetables(broccoli, carrots cut up, and red/green pepper) 1 can Campbell's Tomato soup 2 tablespoons soy sauce 1 teaspoon vinegar 4 cups hot cooked rice
Heat 1 tablespoon oil in skillet. Add the chicken and stir fry until browned. Remove chicken. Stir fry vegetables in remaining oil in skillet until tender crisp. Add soup, soy sauce, and vinegar to skillet, heat to a slight boil and return chicken to pan and heat through. Serve over rice. Serves3-4. ENJOY.
