Football season is here! This always goes over great for me at tail-gates and family gatherings, and its really really EASY.
You'll need:
1-2 lbs ground beef Taco seasoning Large jar of salsa (two if you REALLY like salsa) Tomatos Shredded cheese (two bags please!) Foil and baking pan Tortilla chips ( ... We over here like the Scoops ourselves ;) )
So - to start just make the taco meat by the instructions on the packets of taco seasoning. While that is going, cut the tomatos up. If you like tomatos a lot - lotta big chunks, if you have finicky eaters, go a little more sparingly and cut tiny pieces, or forgo tomatos all together.
Ok, is the meat done ? Go check!
Ok, it is. It should be strained, seasoned, and ready to go - dump it in the bottom of a baking pan and spread it out even( Any size really, if you don't have a deep rectangular pan just as well to use two smaller square pans, or even round ones.)
Now for the tomatos, nice even sprinkling, or just one one side, or whatever you want. Did I mention this was flexible? Its like BK - Have it your way!
And now the salsa, right, spread out even, or, you guessed it, however you like.
And cheese, as much or little as you like - I personally suggest a lot.
Cover the pan with foil and bake at 350 until someone starts sniffing around the kitchen and asking "What's cooking?" This would be a good time to check it. Rough estimate - 15-20 min.
(As I learned this recipe, its done when the cheese is bubbling, which really depends on the cheese and how thick your layers are, so - its easier to say that then give an exact time. The meats cooked, just getting it all to oooze together at this point.)
Once ya pull it out and uncover it, wield a good sized serving spoon to swat away hands until its had a chance to cool a little and settle. Last thing you need on Super Bowl weekend is a trip to the ER because someone got a string of scalding cheese stuck on their face.
Then its just scoop, serve, and dip (this is where those chips come in). Vwalah!
