Hello. I'm a newbie here. Your caring community is wonderful. Because I tend to be private by nature, I have difficulty "jumping in". But, sharing recipes is something that I'm comfortable with. So, here goes --
Carrot Raisin Cupcakes
1 package spice cake mix (18 ounces) 1 can condensed Tomato Soup 1/2 cup water 2 eggs 1 medium carrot, shredded (about 1/2 cup) 1/2 cup raisins 1 cup confectioners' sugar 3 tablespoons unsweetened apple juice
1. Preheat oven to 350F. Place liners in 24 muffin pan cups.
2. Mix cake mix, soup, water and eggs according to package directions. Fold in carrots and raisins. Spoon batter in cups, filling almost full.
3. Bake 20 minutes until toothpick inserted in center comes out clean. Remove from pan and cool completely on wire rack.
4. Mix sugar and juice until smooth. Frost cupcakes.
Makes 24 cupcakes.
I chose this recipe because the tomato soup in a cake recipe has to classify it as a "fun recipe". And, no, you do not taste the tomato soup. Trust me.
